Homemade Pasta and Caribou Meatballs
Sorry for being missing for a couple weeks, my computer was in the shop. I'm back and enjoying the lovely warm February. We've been in the 20's all month! Lovely!!!
A couple months ago I received my new pasta maker, I'm really enjoying it! You do get what you pay for, and even if they all look alike, from my experience they are not all built alike. Go for the ones made in Italy. The Marcato Atlas, and Imperia received the best online reviews. Since shipping to AK can be expensive (or non-existent) I found a new Imperia on Amazon from a private seller with reasonable shipping. So far I love it!
I may have posted this previously, but I'll post the basic recipe again.
1 cup Semolina Flour
1 cup whole wheat or white flour
2-3 eggs

Caribou Meatballs
11/2 pounds ground Caribou (may substitute, beef or combination of any meats, such as pork, beef, lamb)
2 cloves garlic, minced
1 tsp oregano
2 tbsp chopped parsley
1 tsp salt
1 cup breadcrumbs
2 eggs
small amount of milk if necessary to hold together
Mix together, form into meatballs and fry in a small amount of oil.
